We present a home-style interpretation of a beverage found on a new cocktail list. It's a party-sized premix which is bursting full of flavours of a holiday season, making it perfect for hosting a festive gathering. Reserve the remaining citrus syrup for morning drinks, desserts, or for another batch of bikinis.
The Bikini Cocktail
Makes enough for 10 guests
To make the Citrus Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (as made above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
To prepare the Citrus Syrup: Place the listed ingredients inside a pot, bring to a light boil, mixing to dissolve. After that, turn off the burner allowing it to cool fully. Transfer to a sterilised bottle, seal and refrigerate it in the refrigerator, where it will keep for about four weeks.
To make Premix: Mix every spirits and syrup in a large bottle, let it rest for one hour, then filter it , ideally through cheesecloth, to ensure it's perfectly clear.
To serve: Add 85ml from the premix to a stirring glass packed with ice, and agitate gently for about 60 seconds until cold. Pour into a frosted cocktail glass or equivalent, decorate with some cranberries and complete it by giving it a brief mist of the essential oil over the top.
